FAQ's About Topwater Oysters

How do I know these Oysters are safe to eat?

Our product speaks for itself with dedicated commitment of delivering the same beautiful, unique oysters to our customers and restaurants on a regular basis. We maintain compliance with all guidelines provided by the Department of Health and deliver only white-tagged oysters.

White tagging our oysters requires more labor and more runs back and forth to the dock, but it insures our restaurants, clients and dealers that our product is handled and processed better than most oysters on the market today. The majority of the year, the entire harvest must make it into an approved walk-in cooler or refrigeration unit within an hour of harvesting the first oyster from the water.

Do farmed oysters taste better than wild?

Our daily farm management and oyster cultivation process allows us to grow, harvest, and deliver a clean, fresh, savory product to our restaurants, distributors, and clients.

Everything about farm raising oysters in a controlled and maintained environment just makes more sense biologically. By nature, oysters are natural filter feeders, meaning they feed regularly by filtering excess algae, plankton, and other nutrients from the water. Farmed oysters float on the top of the water column where the majority of these nutrients exist and photosynthesis occurs. The oysters are then doing what they do best by filtering the surrounding water naturally. On average, an oyster can filter anywhere from 30-50 gallons of water each day. Oysters help to remove carbon, phosphorus, and nitrogen from the water which makes them healthy contributors to their surrounding ecosystem.

A farm raised oyster requires a great deal of time and labor to consistently maintain a perfect product at all times. This is no different than any other farming operation that provides healthy food for consumers nationwide. If everything is done the right way and handled appropriately, we can provide our restaurants, dealers and clients the same great product every single time an order is placed.

This labor intensive aquaculture cultivation process keeps that very unique and almost flawlessly sized and shaped oyster hitting your plate every time you eat a Topwater Oyster.

Harvesting oysters on a regular basis is another great thing about our delicious farm raised oysters! Being a farm raised product that is overseen and continuously checked and controlled by the Department of Health, our product is safe to consume year round. The approved and tested water at our farms allows us to harvest oysters year round, as long as we meet our time to refrigeration guidelines for the given time of year. At Topwater Oyster Company, providing safe and healthy beautiful oysters is always our top priority.
